Healthy Brownies with FrenzyFruit® Raspberries and Almonds

Ingredients:

For the Brownies:

  • 120 grams almond flour
  • 50 grams cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 120 ml coconut oil, melted
  • 120 ml maple syrup or honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 85 grams dark chocolate chips (optional)
  • 70 grams chopped almonds

For the Topping:

  • 20 grams FrenzyFruit® freeze-dried raspberries, crushed
  • 35 grams chopped almonds

Instructions:

  1. Preheat the Oven:
        - Preheat your oven to 175°C (350°F). Line a square baking pan (20x20 cm) with parchment paper or lightly grease it with coconut oil.
  2. Prepare the Dry Ingredients:
        - In a medium bowl, mix the almond flour, cocoa powder, baking powder, and salt.
  3. Prepare the Wet Ingredients:
        - In a separate large bowl, mix the melted coconut oil, maple syrup (or honey), eggs, and vanilla extract. Stir until well combined.
  4. Combine the Ingredients:
    - Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Add the chopped almonds and, if desired, the dark chocolate chips.
  5. Bake:
        - Pour the brownie batter into the prepared baking pan and spread it out evenly.
        - Sprinkle the crushed FrenzyFruit® raspberries and chopped almonds over the top of the batter.
        - Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes outmostly clean (a few crumbs are fine, but it shouldn't be wet).
  6. Cool and Serve:
        - Let the brownies cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely.
